The flavors and contexts of the delicious Khichuri or Khichri, also spelled Kitchari, can range from Ayurvedic cleansing to comfort
food on cold and wet days to elaborate feasts during festivities in the eastern part of India, where the instructor comes from. In this
interactive online workshop, she brings you recipes passed down through generations in her family of Ayurvedic / Dhanwantari
lineage. Learn about specific ingredients for each context, including warming and cooling spices based on their properties used in
this vegan or vegetarian one-pot meal. Reliable internet and laptop or phone with front-facing camera required to participate.

Please read:  Supplies for Khichuri A Khichuri kit with all the dry ingredients and ghee needs to be ordered from the instructor in advance at an extra cost of $25 (free no-contact pick up from mid-town area or delivery within Santa Fe). The Khichuri kit includes: Pre-mixed combination of rice and daals (legumes) Separate packets of brown Basmati rice, red lentil daal, Dry spices (whole and ground), ghee (clarified butter) and ginger root Student will use their own: Medium to large pot deep enough for cooking one-pot meal of fat least our servings. Vegetables (choose a few from potatoes, peas, carrots, cauliflower, green beans and optional spinach) Wet spices (onion, garlic, tomato, ginger, and optional green chilies and cilantro or mint leaves), One tablespoon of vegetable oil Salt Optional: cucumber and yogurt to make a cooling side of yogurt sauce
